| My mother had a very serius operation where they removed a tumor out of my mothers colon; her doctors were so wonderful, the hospitals nursing staff was beautiful and my family and I are trying to show our appreciation for the wonderful care that they gave us. We are going to have a sit down dinner and I was thinking about a rib roast and cornish hen, but I wanted to stuff the cornish hens with something but I don't know what to stuff them with; I want several vegetables. I want a lot of food out, I have 3 doctors and 5 nurses that will be there. Can anyone give me any ideas on dinner. Before dinner we will be handing out gifts., I wanted to give them plaques like best doctor or nurse, but my family says that was stupic and they wanted to give gift certificates to the day spa but 2 doctors and 1 nurse is male and I know they wouldn't want to go to the day spa. I DON'T KNOW WHAT TO DO!!!!!!! |

| I certainly hope that your mom is doing well now, and it's sweet of you to do something for the doctors & nurses:) .... You might get them gift cards to Starbuck's, or whatever coffee shop is near the hospital.....Rib roast and Cornish hens sounds wonderful, but you should make sure none of them are vegetarian:) You might want to have a vegetarian lasagna, or something similar, instead of the hens then. We've never stuffed the hens, but DO glaze them with orange juice/currant jelly whisked together ........Steamed bundles of asparagus ("wrap" the bundles with strips of roasted red peppers); Caesar Salad; Fruit salad (hollow out 1/2 watermelon & refill with cubed melon, berries & pineapple - garnish with sliced starfruit & fresh mint leaves) .... rice pilaf or wild rice .......** You might want a veggie/dip platter and maybe a baked Brie & crackers for appetizers before hand........** Dessert: Get an Angel Food cake and split into 3 layers (use long, serrated bread knife). Fill layers with whipped cream & sliced strawberries or raspberries, or sliced peaches - and put whipped cream and sliced fruit on top too. OR, make jellyrolls and fill with whipped cream & berries... OR make cream puffs and fill with whipped cream & berries..... |

| Give them all the same gift. A gift certificate/card to a elegant local restaurant in an amount that each can bring a guest and not exceed the certificate amount with a alcoholic drink or two. Put these in pretty various colored envelopes at each place setting with their first names on the front. As for the Cornish Hens. Serve 1 whole hen each. Stuff with Mardarin oranges from a can, wild rice, diced celery and onions,some fresh thyme and rosemary chopped fine, dried sweetened cranberries (Craisins), kosher salt to taste, black pepper, Lea and Perrins chicken sauce (formerly White wine Worsteshire sauce) and a dash of garlic powder. Baste the hens with Honey and Orange Juice Concentrate straight from the can about every 15 minutes. Serve with:Appetizers:Bacon wrapped Shrimp done under the broiler with a Teriyaki sauce dip. Spring rolls cut in small pieces, with a Asian Chill Sauce dip.Side Dishes:Fresh peas and carrots with butter.Green beans AlmondineWhole grain Artisan bread with Danish or Irish Butter (Higher butterfat content than USA butter) look for Lurpak or Kerrigold.Spinach salad with Honey-mustard dressing, hard boiled egg slices and diced pickled beets. For Dessert: Warm Apple Crisp with Vanilla bean ice cream and coffee/tea and/or a fine Cognac. |

| 5 Star Prime Rib Roast "This recipe came from a chef in Las Vegas."First of all start with the best prime beef you can find, nothing replaces that and it's worth every penny.This recipe applies to any size roast you choose to cook. You will want to have Au Jus and Horse Radish sauce to serve with this.1. Slice several cloves of fresh garlic in half lengthwise.2. Cut small slits all over the roast and place garlic halves in each one. 3. Pack the roast heavily with Kosher salt, as much as it will hold.4. Completely wrap the roast in wet cheesecloth.5. Place on an oven rack in a roasting pan with some water in the bottom of the pan.Bake at 350 deg. F for 20 minutes to the pound for rare, 30 minutes for medium, and 40 minutes for well done.Serve with hot Au Jus over the sliced beef.****************************************************Stuffed Cornish Game Hensby the Editors of Easy Home Cooking MagazineMakes 8 servings Ingredients: 1 cup chicken broth3/4 cup uncooked quick-cooking couscous1 tablespoon butter1/4 cup finely chopped shallots1/4 cup diced celery1/4 cup golden raisins1/4 cup chopped dates1/4 cup toasted pine nuts1 teaspoon ground cumin1/4 teaspoon paprika1/2 teaspoon salt1/4 teaspoon black pepper Nonstick cooking spray4 Cornish game hens2 tablespoons olive oilSalt and black pepper3/4 cup orange marmalade, thinned with 2 tablespoons waterOrange slices (optional)Preparation: 1. Bring chicken broth to a boil in medium saucepan over medium heat. Remove from heat; stir in couscous. Let stand, covered, 5 minutes. Transfer couscous to large bowl; fluff with fork and set aside.2. In same saucepan, melt butter over medium heat. Add shallots and celery; cook, stirring frequently, until onion softens and begins to turn golden. Remove from heat; stir in raisins, dates, pine nuts, cumin, paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper.3. Add shallot mixture to couscous and stir until well incorporated.
